Seafood Recipes...

 

Name: Sturgeon Taco

No. Servings "4"

Special Ingredients

2 cups of diced Sturgeon (1/2" cubes) 1 small can of diced tomatoes
Cajun spice to taste 1 small can of tomato sauce
Mrs. Dash lemon pepper to taste 1 chopped Shallot
Non-fat cooking spray 1/2 cup of white wine
1 tbsp. of dry Basil 1/2 cup of diced bell peppers (vary color)
1 tbsp. of Chives Optional - taco seasoning to taste
2 tbsp. of lemon juice  

Marriage of Ingredients

Coat sturgeon cubes with Cajun spice & Lemon pepper then fry using non-fat spray until the fish is almost done.
Remove Sturgeon cubes from pan and set aside for later.
Deglaze the pan with white wine & add Bell peppers and Shallots. Cook for 3 minutes, then add diced tomatoes, tomato sauce and simmer for 5 minutes
While the dish simmers, add the Basil, chives and more White Wine.
Taste the Dish…..if you like it spicy, add some Taco seasoning to satisfy your taste buds…….simmer for 3 minutes.
Now add the Sturgeon chunks back into the pan and simmer for 3 minutes or until the Sturgeon is warmed through…Squeeze the juice of 1/2 lemon over the fish, then….
 
Serve with Tacos shells or Flour Tortillas…..Enjoy….
