| Name: Sturgeon Taco | No. Servings "4" |
Special Ingredients |

| 2 cups of diced Sturgeon (1/2" cubes) | 1 small can of diced tomatoes |
| Cajun spice to taste | 1 small can of tomato sauce |
| Mrs. Dash lemon pepper to taste | 1 chopped Shallot |
| Non-fat cooking spray | 1/2 cup of white wine |
| 1 tbsp. of dry Basil | 1/2 cup of diced bell peppers (vary color) |
| 1 tbsp. of Chives | Optional - taco seasoning to taste |
| 2 tbsp. of lemon juice | |
Marriage of Ingredients |

| Coat sturgeon cubes with Cajun spice & Lemon pepper then fry using non-fat spray until the fish is almost done. | |
| Remove Sturgeon cubes from pan and set aside for later. | |
| Deglaze the pan with white wine & add Bell peppers and Shallots. Cook for 3 minutes, then add diced tomatoes, tomato sauce and simmer for 5 minutes | |
| While the dish simmers, add the Basil, chives and more White Wine. | |
| Taste the Dish ..if you like it spicy, add some Taco seasoning to satisfy your taste buds .simmer for 3 minutes. | |
| Now add the Sturgeon chunks back into the pan and simmer for 3 minutes or until the Sturgeon is warmed through Squeeze the juice of 1/2 lemon over the fish, then . | |
| Serve with Tacos shells or Flour Tortillas ..Enjoy . | |
